Stuffed Mushrooms
The stuffed mushrooms cooked. I ate the bottom right one before I remembered to take a picture.
I bought some baby bella mushrooms a couple of weeks ago thinking I’d figure out something to do with them.
I was sitting around on Super Bowl weekend and looked up ‘stuffed mushrooms’ and it turned out we (barely) had all of the ingredients so I made some stuffed mushrooms for the Super Bowl.
My sister makes really good stuffed mushrooms. They’re a holiday highlight.
I did not set out to surpass her with this - it was just the first thing I thought of with the mushrooms. (You may remember I am trying to work mushrooms into the diet a little more often.)
The recipe I found called for bread crumbs and cheese mixed together - we had just enough breadcrumbs for most of the mushrooms. I think I left two unstuffed and just cooked them along with the rest.
If I did this again - since the actual stuffing of the mushrooms was so easy - I might make a more complicated stuffing to fill them with.

I remember once making a stuffing for something - I don’t know if it was a clam dish? That doesn’t seem like something I’d make. I actually don’t remember - maybe it was like a stuffed pork chop? Wow. I can’t believe I forgot. Anyway, I remember making that stuffing with an egg and a couple of other ingredients. That could be good for stuffing the mushrooms.
And I think it might be worth looking into stuffing some bigger mushrooms, like the portabellas.
I made these stuffed mushrooms with zero forethought. I just saw the recipe, knew I had all of it, and threw them in the oven. (Kathy made loaded baked potatoes and sliders - that was our Super Bowl Sunday meal, if you were wondering.)
With some time to plan, I think there’s some fun potential here…and the mushrooms are something I don’t mind experimenting with.
